One Pan Salmon & Asparagus with Herb Butter

This one-pan meal is great for weeknights and takes less than half an hour to make.

Ingredients

680-900g salmon fillet

1tbsp olive oil

½ large lemon, thinly sliced for garnish

900g asparagus, with ends trimmed

Salt and black pepper

Flavoured Butter

85g unsalted, softened butter

2tbsp lemon juice

2tbsp fresh, finely chopped parsley plus a little extra for garnish

2 cloves of garlic (mashed or finely chopped)

1tsp salt

1/4tsp black pepper

Instructions

  1. Place oven rack in top third of oven and preheat oven to 230°C. Line a large baking tray with parchment, ensuring the edges do not extend beyond the pan.
  2. Mash together all flavoured butter ingredients in a small bowl, stirring until lemon juice is completely incorporated then set aside.
  3. In the centre of your baking pan, place your salmon fillets skin side down. Arrange asparagus around the salmon and drizzle with olive oil. Roll the asparagus to lightly coat in oil and sprinkle salmon and asparagus with salt and pepper.
  4. Coat salmon with three quarters of your flavoured butter and dot the remaining butter over the asparagus. Scatter dish with lemon slices and bake for 10 to 12 minutes until salmon is cooked and flaky. Finish under a hot grill for 2 to 3 minutes. Garnish with fresh parsley to serve.
